Salmon with Coconut Sauce

Salmon with vegetables and creamy sauce

Serves 2

2 salmon filets
4 oz coconut milk
2 tsp oil, divided
2 tb minced onions
1 clove garlic, minced
1 tsp ginger, grated
1/4 tsp red chili flakes
1/2 lime, juiced

Directions
In a saucepan over medium heat, warm 1 teaspoon oil and cook garlic, onions, ginger, and red pepper flakes until softened, 3 minutes. Add coconut milk and bring to a boil, then simmer on medium until thickened, 10 to 12 minutes. Add in fresh lime juice and set aside.

Meanwhile, heat a large skillet over medium-high heat. Season salmon with salt and pepper, then add remaining oil and sear salmon, 4 minutes per side.
Serve salmon with warm coconut sauce and top with green onions or cilantro.
