- 2 tbsp chia seeds
- 4 oz coconut milk (full-fat from a can)
- 3 oz unsweetened almond milk
- 2 tsp maple syrup
- 1/4 cup pumpkin puree
- 1/2 tsp pumpkin pie spice
- 1/2 tsp vanilla
Mix all ingredients together in a bowl until everything is well incorporated. Cover and place in the fridge to firm up for at least 4 hours, or overnight.
Garnish with a sprinkle of cinnamon and enjoy!
