Pumpkin Spice Chia Pudding

Serves 1

2 tbsp chia seeds
8 oz unsweetened almond milk
1-2 tsp maple syrup
¼ cup pumpkin puree
½ tsp pumpkin pie spice
½ tsp vanilla

Mix everything together and refrigerate overnight or for at least 2-3 hours. Stir well before eating.
