Pumpkin Spice Latte Chia Pudding

Serves 2
  • 2 tbsp chia seeds
  • 4 oz coconut milk (full-fat from a can)
  • 3 oz unsweetened almond milk
  • 2 tsp maple syrup
  • 1/4 cup pumpkin puree
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp vanilla

    Directions

    Mix all ingredients together in a bowl until everything is well incorporated. Cover and place in the fridge to firm up for at least 4 hours, or overnight.
    Garnish with a sprinkle of cinnamon and enjoy!
