I saw this recipe on Facebook last week and new I had to make a Paleo version of it! It was so delicious that I actually looked forward to eating the leftovers the next day and I NEVER eat leftovers! 

I made it on the stove in well under an hour but I imagine this would be a perfect slow cooker recipe, ideal for the chilly weather upon us!

If there is one food I don't miss since going Paleo it is Pasta. However occasionally I just get a craving for a "noodle". I love zucchini noodles so when I was craving a pasta style dish yesterday, I decided to try my hand at a classic carbonara with zucchini noodles. Don't let the long list intimidate you. Just take one step at a time and the end result will be a creamy and delicious dinner!

As the weather gets warmer I crave lighter dishes and tend to eat a lot more fish. We have been cooking our fish via Sous Vide, which is to cook sealed in a water bath at a low regulated temperature. This allows for any protein to be cooked to perfection and results in a melt in your mouth tender and moist fish! 

Because not everyone has a Sous Vide Machine this recipe is adapted for the oven.

I am doing something I rarely do, post a recipe that is 100% NOT Paleo. Every once in awhile I like to indulge and when it comes to "bread" I prefer to indulge in only the best and freshly made. These steamed buns are not only incredibly delicious but easy as well. Fill them with Pulled Pork, Crispy Pork Belly or even simple Taco Meat!

October tends to be my busiest month of the entire year so when it comes to what to make for dinner I need something that is quick and easy. This is a perfect recipe if you have any tomatoes grown that haven't ripened but need to be picked before the frost ruins them. No green tomatoes? Not to worry!

I always try and post recipes that are seasonal but this one is anything but! Really more of a fall dish with the use of Sweet Potato and a comfort style meal that would lend well to a cooler day. Summer has arrived! I tend to eat a TON of Salads in the hot months and luckily my Boyfriend loves them. His favorite is a traditional Cobb Salad. With Easter this month and the weather still rather cool I wanted to make a dish that was comforting and hearty. Although this recipe looks long it is simple to put together and can be adjusted to a slow cooker for even more ease. You can also make the meatballs appetizer size and serve with toothpicks! 

My only regret when creating this recipe was that I didn't double it and freeze half!
