Jerk Chicken Skewers

Jerk Chicken Skewers

Serves 4 as a main or 8-10 as appetizers 
  • 2 lbs bonless skinless chicken breasts, cubed
  • Marinade Ingredients:
  • 1 TB avocado oil
  • ⅓ cup GF soy sauce
  • ⅓  cup lime juice
  • ⅓  cup apple cider vinegar
  • 5 cloves garlic
  • 2 tsp maple syrup
  • 1 jalapeños with seeds, chopped in half (or to taste)
  • 1 small red onion, chopped
  • 2 TB fresh thyme leaves
  • 1 tsp salt
  • 1 tsp freshly ground black pepper
  • 1 TB ground allspice
  • 2 tsp cinnamon
  • 1 tsp ground nutmeg
  • 2 inch piece fresh sliced ginger
  • 3 whole peaches, thickly sliced or 1 cup pineapple, cubed



Cut the chicken into 1 inch chunks and place in a bowl.

Place all the marinade ingredients in the blender, and blend until relatively smooth. Pour the marinade over the chicken. Let sit 30 minutes or up to 1 hour. ( The longer your marinate, the spicier they will become.)

Skewer chicken with peach or pineapple slices. 

Preheat oven to 425 and place skewers on a baking tray covered with foil. Bake for approximately 12-15 minutes turning once until cooked through.

Alternatively heat grill to high on one side only. Spray grates with cooking spray and grill skewers for 2-3 minutes on each side over direct heat. Then move skewers to the other side and cook on indiret heat for a further 15-18 minutes until chicken is cooked through.
