Pork Pad Thai

serves 2

  • 2 heaping tablespoons peanut butter
  • 2-3 tablesppons water
  • 3 tablespoons soy sauce
  • 2 tsp ginger, grated
  • 2 tsp honey
  • 2 large cloves garlic minced
  • 1 tablespoon fish sauce
  • Juice of 1 lime
  • 1/4 teaspoons crushed red pepper
  • 100 grams Rice Noodles
  • 1 tsp sesame oil
  • 14-16 oz pork tenderloin, cut into strips (or chicken)
  • 1 tablespoon avocado oil
  • 1 cup carrots, julienned or shredded
  • 1 small red bell pepper, julienned
  • 1 green onion, sliced thin
  • 1 tablespoon unsalted peanuts (optional)
  • 1 small handful of fresh torn basil
  • 1-2 tsp toasted sesame seeds


Place all sauce ingredients in a bowl and mix well. 

Cook noodles until JUST soft. 

Heat oil in a large skillet over high heat. Season pork with salt and add to hot skillet. Cook until evenly browned on all sides (3 minutes). Set aside. Add the bell pepper and stir fry for 1-2 minutes. Take the pan off the heat and mix in the sauce. Add back in pork and carrots. Finally toss in noodles and coat well with sauce. Garnish with basil, green onion, peanuts and sesame seeds.
