Pork Pad Thai

Ingredients  Scale

  • 1/4 cup peanut butter
  • 1/4 cup water
  • 3 tablespoons soy sauce
  • 2 tsp tamarind paste
  • 2 tsp ginger, grated
  • 1 tablespoons coconut palm sugar
  • 2 large cloves garlic minced
  • 1 1/2 teaspoon fish sauce
  • Juice of 1/2 lime
  • 1/4 teaspoons crushed red pepper
  • 8 ounces Rice Noodles
  • 1 teaspoon sesame oil
  • 1 1/2 pound pork tenderloin, cut into strips (or chicken)
  • 2 tablespoons avocado oil
  • 3 cloves garlic, minced
  • 1 cup carrots, julienned
  • 1 red bell pepper, julienned
  • ¼ cup green onion, sliced thin
  • ¼ cup unsalted peanuts
  • 2 tablespoons cilantro
  • 1 TB Toasted sesame seeds

Directions

Place all sauce ingredients in a bowl and mix well. 

Cook noodles until JUST soft. 

Heat 2 tablespoon oil in a large skillet over medium-high heat. Add the garlic and pork strips and cook until evenly browned on all sides (3-4 minutes). Add the carrots, pepper in with the pork and stir fry for 1-2 minutes. Take the pan off the heat and mix in the sauce, green onions, and peanuts. Finally toss in bean sprouts and noodles and coat well with sauce. Garnish with cilantro and sesame seeds.
