Paleo Cabbage Roll Soup

Serves 6-8

Ingredients:

1 onion, diced
4 cloves garlic, minced
1 lb lean ground beef
1 lb ground pork or pork sausage
1/2 large head cabbage, sliced (core removed)
28 ounce can diced tomatoes (fire roasted preferably)
3 tablespoons tomato paste
4 cups beef broth
1 cup tomato juice (or for a non paleo version V8 juice)
1 teaspoon paprika
1 teaspoon thyme
2 tablespoon Gluten Free worcestershire sauce
2 tablespoons apple cider vinegar
1 tsp dijon mustard
1 tsp red chili flakes (or to taste)
1 bay leaf
salt and pepper, to taste

Directions:

In a large pot over medium high heat brown onion, garlic, pork and beef.
Stir in chopped cabbage and let cook until slightly softened (about 3 minutes).
Add all remaining ingredients, bring to a boil and reduced heat to medium low. Cover and simmer on low for 30 minutes. 
Remove bay leaf, taste for seasoning and serve.

(If you aren't concerned about dairy, topping this with a little sour cream would be delish!)
