Sauteed Asparagus with Lemon Garlic Gremolata

Serves 4-6


2 pounds asparagus
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 tablespoons oil, divided (I use avocado oil because of its mild taste and high smoke point)
1/4 cup fresh flat-leaf parsley, minced
1  lemon, zest and juice
1 garlic clove, minced

Snap off tough ends of asparagus. Heat oil over medium high heat, saute asparagus seasoning with salt and pepper until crisp-tender, about 5 minutes. Place asparagus on a large platter.

Combine parsley, oil, garlic, lemon zest and juice. Sprinkle over asparagus, tossing gently.
