Carrot Cake Coconut Balls

Ingredients

Yields: 20 

2 Carrots, Grated
7 Medjool Dates
1 Orange, Zested
1 Cup Cashews
1 tsp Pure Vanilla Extract 
1/3 Cup Ground Flaxseed
3 tsp Coconut Oil, melted
3 tsp Coconut Cream (let can chill in fridge over night and use only the top)
1/2 Cup Unsweetened Coconut Flakes (plus more for rolling)
1/2 tsp Cinnamom

Preparation

Put all ingredients into a food processor and process until well blended. Chill in fridge for 30 minutes for easier rolling. 

Roll into balls and then roll into coconut. Chill at least 4 hours but preferably over night.
