Paleo Banana Bread

Serves 8-10

Ingredients

5 Organic Bananas (yellow not over ripe)

4 Eggs

1/2 Cup Almond Butter (or Sunbutter for a nut free version)

1/4 Cup Melted Coconut Oil

1 tsp Pure Vanilla

1/2 Cup Coconut Flour

1 tsp Baking Soda

1 tsp Baking Powder

Optional Ingredients: (1/8 cup of ground flax, 1/2 Cup Dairy Free Chocolate Chips or 2 TB Cocoa Powder)

Blend eggs, almond butter and bananas in a blender until smooth, add vanilla and coconut oil and incorporate. Add remaining dry ingredients and blend until completely combined. (if using chocolate chips mix in by hand) Pour into a large loaf pan lightly greased with coconut oil and bake at 350 for approximately 1 hour or until tooth pick comes out clean. Alternatively pour into two loaf pans and bake for approximately 30-40 minutes.

If serving as dessert I love using chocolate chips and a dollop of Coconut Whipped Cream!

For a quick snack make as muffins and decrease the baking time.
