Prosciutto Wrapped Pear & Mint

Makes 8-10 pieces


1 tablespoon olive oil
1 teaspon Lemon Juice
Salt & Pepper to taste
8-10 pieces fresh mint
1 unpeeled very ripe pear, halved, cored, each half cut into 8-10 wedges
Thin prosciutto slices


Mix oil, lemon juice and salt and pepper in small bowl; toss pears. Take one piece of mint and place on pear, wrap in prosciutto.
